Rice Pudding

-Cats are connoisseurs of comfort.-

This makes a sweet and easy complimentary side dish or dessert.

  • 1/3 cup rice
  • 2 1/2 cups milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 3 tablespoons sugar
  • Raisins (optional)
To serve:
Choose from:
strawberries, raspberries or blueberries
chocolate sauce
slivered toasted almonds
  • Heavy medium saucepan
  • Heat resistant spoon
  • Measuring spoon
  • Measuring cup
  • Sundae dishes
1.  Put the rice, milk, vanilla extract, cinnamon and sugar (raisins- optional)  in a medium saucepan.  Bring to a boil, stirring constantly, and then turn down the heat to a gentle simmer.  Do not cover with a lid.
2.  Cook the rice for 30-40 minutes, stirring occasionally to prevent a thick film from forming.  Add extra milk if it reduces too quickly.
3.  Make sure the grains are soft, then remove the pan from the heat and allow the rice to cool, stirring it occasionally.  When cool, chill the rice in the refrigerator.
4.  Just before serving, stir the rice and spoon into four sundae dishes.  Top with fruit, chocolate sauce, and almonds.

While you dip into this delicious dish, enjoy a brief glimpse into my new novel, Starter Zone, coming September 25!

Street gangs rule the cities in the three years since the fall of civilization. Sixteen-year-old Cami and her younger sister Alby struggle to survive. Every drop of untreated water puts their lives in peril. Caught and imprisoned by soldiers who plan to sell them into slavery, Cami will do anything to escape and rescue her sister. Even if it means leaving the real word for a life in the realms, a new game-like reality created by the hydrologists for the chosen few.

But life in the realms isn’t as simple as it seems. Magic, combat, gear scores, quests, and dungeons are all puzzles to be solved as the sisters navigate their new surroundings. And they encounter more dangerous enemies than any they faced in the real world.

Time to play the game.
