Blueberry Brunch Cake

This cake works wonderfully with either fresh or dried blueberries.  Enjoy!

  • 4 tablespoons butter
  • 3/4 cup sugar
  • 1 egg
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 cups blueberries, rinsed, dried
  • 2 tablespoons flour
  • 1/2 cup sugar
  • 1/3 cup flour
  • 1/2 teaspoon cinnamon
  • 4 tablespoons butter
  • Measuring cup
  • Measuring spoon
  • Large spoon
  • Fork
  • Large bowl
  • 2 Medium bowls
  • Sifter
  • 8- or 9-inch square pan
  • toothpick
1.  Preheat oven 350 degrees.  In large bowl cream butter and sugar.  Add egg. Mix well.
2.  Sift together flour, baking powder, and salt in medium bowl.
3.  Add flour mixture to creamed mixture alternately with the milk.
4.  Combine blueberries and 2 tablespoons flour (this prevents the blueberries from turning the batter bluish).  Gently fold in blueberries into the mixture just until blended. Pour batter into greased 8- or 9-inch square pan.

5.  Combine sugar, flour and cinnamon toppings in medium bowl.  Cut butter into mixture with a fork.  Sprinkle over batter in the pan.  Bake for 45 minutes or until a toothpick inserted in center comes out clean.  Cool in pan.

While you dig into this delicious dessert, enjoy a brief glimpse into my new novel, Starter Zone, coming September 25!

Street gangs rule the cities in the three years since the fall of civilization. Sixteen-year-old Cami and her younger sister Alby struggle to survive. Every drop of untreated water puts their lives in peril. Caught and imprisoned by soldiers who plan to sell them into slavery, Cami will do anything to escape and rescue her sister. Even if it means leaving the real word for a life in the realms, a new game-like reality created by the hydrologists for the chosen few.

But life in the realms isn’t as simple as it seems. Magic, combat, gear scores, quests, and dungeons are all puzzles to be solved as the sisters navigate their new surroundings. And they encounter more dangerous enemies than any they faced in the real world.

Time to play the game.
