Blueberry Pumpkin Breakfast Muffins


These muffins are naturally sweetened with local blueberries, which are a favorite of my family. The added pumpkin makes it a wonderful fall treat. You can eat them warm or prepare them the day before for breakfast.

  • 1 2/3 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1 cup solid pack pumpkin
  • 1/4 cup undiluted evaporated milk
  • 1/3 cup shortening
  • 1 cup firmly packed light brown sugar
  • 1 egg
  • 1 cup blueberries
  • 1 tablespoon flour
  • Streusel
  • 2 tablespoon flour
  • 2 tablespoon sugar
  • 1/4 teaspoon cinnamon
Cut in 1 tablespoon butter with a fork until mixture is crumbly.

  • 18 muffin tins
  • Mixer
1. Heat oven 350 degrees.  In medium bowl combine flour, baking soda, baking powder, salt, cinnamon, and allspice.  Set this aside.
2.  In another medium bowl combine pumpkin and evaporated milk until blended.  Set this aside.
3.  In large bowl cream shortening and sugar.  Then add egg and beat with mixer until mixture is fluffy.
4.  Add flour mixture alternately with pumpkin mixture, beating well after each addition.
5.  Combine blueberries and 1 tablespoon of flour.  (This prevents the blueberries from turning the batter a bluish color)  Gently stir into batter.
6.  Fill 18 paper-lined or greased muffins tins 3/4 full.
7.  Combine streusel ingredients in a medium bowl.  Sprinkle this over the top of muffins.
8.  Bake 40 minutes or until toothpick inserted in center comes out clean.
Makes 1 1/2 dozen.
