Roasted Tomato Soup

100_5687It’s that time of year when the temperature starts to dip and my family starts requesting warm comfort foods. This soup will help to take the chill off a fall day!
Ingredients:
  • 3 pounds of roma tomatoes or any type quartered (washed and cored)
  • 1 yellow onion halved and quartered
  • 1/2 red bell pepper, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon salt
  • 1 1/2 teaspoons freshly ground black pepper
  • 3 cloves garlic, halved
  • 5 cups chicken broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried parsley
  • 3/4 cup cream/milk (optional)
Materials:
  • Baking sheet
  • Aluminum foil
  • Stock pot/Large pot
  • Blender
  • Knife
  • Measuring cups
  • Measuring spoons
Directions:
1.  Preheat oven 400°.
2.  Cut up vegetables.
3.  Line a baking sheet with aluminum foil.  Spread tomatoes, onion, bell pepper in 1 layer on the baking sheet.  Drizzle vegetables with olive oil and season with salt and ground pepper.  Roast in the oven 30 minutes.
4.  After the vegetables have roasted for 30 minutes, add garlic to the mixture and continue roasting another 15 minutes more.
5.  Bring broth, basil, and parsley to a boil in stock pot, reduce heat and simmer.
6.  Put half of the tomato mixture in the blender.  Cover and hold lid down, pulse a few times before leaving it on to blend until smooth.  Add a small amount of warm chicken broth mixture if more liquid is needed in the blender.
7.  Pour pureed tomato mixture into stockpot with chicken broth.
8.  Puree remaining half of the tomato mixture into the blender and repeat with pulsing a few times and blending until smooth.  Add this to the chicken broth, mix well.  If desired add cream or milk for a richer flavor.
9.  Simmer 5 minutes and serve with homemade croutons if desired.

But life in the realms isn’t as simple as it seems. Magic, combat, gear scores, quests, and dungeons are all puzzles to be solved as the sisters navigate their new surroundings. And they encounter more dangerous enemies than any they faced in the real world.
