This vegetarian/vegan dish makes a delicious lunch.
- 1/2 avocado
- 1 Slice Toasted Bread of Choice (I used French Bread slices)
- 2 Tablespoons chickpeas (rinsed and drained)
- Slices of tomatoes
- Balsamic vinegar dressing
- Garnish with fresh basil leaves (optional)

1. Toast bread of choice. In meantime mash avocado in bowl.
2. When toast is done spread on avocado, top with chickpeas and slices of tomato. Drizzle with balsamic vinegar and garnish with basil leaves (optional).
