Chicago Beets

This vegan/vegetarian dish makes a nice side for your fall dinners.
  • 2 pounds beets, well rinsed
  • 1/2 cup sugar
  • 5 Tablespoons red wine vinegar
  • 1/4 cup fresh orange juice
  • 2 teaspoons cornstarch
  • Salt and freshly ground black pepper to taste
  • 1 Tablespoon unsalted margarine
  • Grated peel of 2 oranges
  • Measuring cups
  • Measuring spoons
  • Medium saucepan with lid
  • Knife
  • Grater
  • Heavy saucepan
  • Whisk
1.  Place beets in medium saucepan, cover with cold water.  Bring to a boil.  Reduce heat to a simmer, cover and cook until tender, 40 to 50 minutes.  Drain and rinse under cold water to cool.  Slip off skins; cut beets into 1/4-inch dice.  You should have 4 cups.  Set aside.
2.  Combine sugar, vinegar, orange juice, cornstarch, salt and pepper in heavy saucepan.  Whisk well and bring to boil over medium heat, whisking constantly until mixture is clear and thickened, 4 to 5 minutes.  Whisk in margarine and orange peel.  Cook just until margarine has melted.  Remove from heat pour sauce over beets.  Toss gently.  Serve hot or at room temperature.
