This Cranberry, Coconut, Chocolate Zucchini Bread is a family favorite. I hope that you enjoy!

• 2 Egg whites
• 1 Egg
• 1/2 cup olive oil
• 1/2 cup unsweetened applesauce
• 3/4 cup sugar
• 3 cups shredded zucchini
• 3 cups all purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1 teaspoon cinnamon
• 1/2 cup coconut
• 1 cup chopped walnuts
• 1 cup dried cranberries
• 1/2 cup chocolate chips
• Measuring cups
• Measuring spoons
• Large bowl
• Medium bowl
• 2 loaf pans
• Nonstick cooking spray
1. Preheat oven 350°. Spray 2 loaf pans with cooking spray on bottom of pans only. In large mixing bowl combine flour, baking soda, baking powder, and cinnamon. Set aside.

2. In medium bowl combine eggs, oil, applesauce and sugar. Make a well in the dry ingredients and add wet ingredients.

3. Add zucchini, coconut, walnuts, cranberries and chocolate chips to bowl. Divide batter into 2 loaf pans. Bake for 1 hour or until a toothpick comes out clean after being inserted. Cool in pans.
