For most of my life I thought making tapioca was a time-intensive dessert. After adding the ingredients to the pan, I would stand at the stove and stir–and stir–and stir. Generally I would be stirring for more than 15 minutes. I had so many other things I needed to do, this dessert fell by the wayside.
Until I discovered how to cook tapioca in a crockpot.
I stir the pudding at the one hour and two hour mark, which adds one minute of stirring to my schedule. Quick and easy indeed!
4 Cups of Dairy Free Coconut Milk
2/3 Cup of Sugar
1/2 Cup Small Pearl Tapioca
1 Tablespoon Vanilla
Spoon for Stirring
In the large bowl mix together the coconut milk, sugar, eggs, and vanilla. Beat thoroughly with the hand mixer so that the eggs are blended with the other materials. Mix in the tapioca.
Cook in the crockpot on medium heat for 3 hours or on low for 6 hours. Stir occasionally when cooking. Serve either warm or cold. Top with fruit (optional).
Makes 6 Servings.
Note–do not use Minute Tapioca for this recipe. It has been ground to absorb liquid faster than the Small Pearl Tapioca and will not cook well in a crockpot.
