Crock pot cooking makes life so easy for busy people. This lentil soup is a family favorite and is a healthy vegan/vegetarian recipe. 
  • 2 cups lentils 
  • 3/4 cup barley
  • 8 cups vegetable stock
  • 1 large onion, chopped
  • 2 medium carrots, diced
  • 2 ribs celery, diced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon dried red pepper flakes (optional)
  • 1/4 teaspoon freshly ground black pepper or to taste
  • salt to taste
  • Measuring cups
  • Measuring spoons
  • Large soup pot/Dutch oven
1.  Place all ingredients, except salt, in a large Crock Pot/Dutch Oven.  
2. For the Crock Pot–cook on high for two hours until lentils and barley are tender.
3. For the Dutch Oven–bring to a boil, reduce heat and simmer, covered, 45-55 minutes, stirring occasionally until lentils and barley are tender. 
4. Add additional stock or water to reach desired consistency, if needed.  Add salt to taste.  Enjoy.
