For the first day of Autumn this is a perfect dish to pair with a cup of warm coffee!
Ingredients:
  • 2-1/4 cup all purpose flour, divided
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon margarine softened to room temperature
  • 1-1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup plain yogurt (coconut or low fat)
  • 2/3 cup granulated sugar
  • 2 egg whites
  • 1 egg
  • 1 teaspoon grated lemon peel
  • 1 teaspoon lemon juice
  • 4 medium plums, seeded, cut into 1/4-inch-thick sliced
  • Nonstick cooking spray
Materials:

  • Large bowl
  • Medium bowl
  • Electric beater
  • Cutting board
  • Sharp knife
  • Grater/Zester
  • 9-inch square pan
  • Cooling rack
  • wooden toothpick
Directions:
1.  Preheat oven 350°F.  Coat pan with cooking spray; set aside.  For streusel topping, mix 1/4 cup flour, brown sugar, cinnamon, and margarine in small bowl with fork until crumbs form; set aside.
2.  Mix remaining 2 cups flour, baking powder, baking soda, and salt in large bowl.  Beat yogurt, granulated sugar, egg whites, egg, lemon juice, lemon peel in medium bowl with electric mixer until well blended.  Stir yogurt mixture into flour mixture until ingredients are combined.
3.  Pour batter into prepared pan.  Arrange plums on top of batter; sprinkle streusel topping evenly over plums.  Bake 30-35 minutes or until wooden toothpick inserted in center of cake comes out clean.  Cool in pan on wire rack 10 minutes. Serve warm.  Makes 16 servings.
