Cookie Battle: Peanut Butter Versus Chocolate and Peanut Butter

Cookies are the perfect portion size, easy take on the go, and are also the perfect dessert to pass around to friends and loved ones.
 
Some love peanut butter and some love chocolate more. So a mix is perfect for those times when you want to share.
 
 
Peanut Butter Oat Crunch Cookies
 
Ingredients:
  • 1/4 cup butter, softened
  • 1/4 cup creamy peanut butter
  • 1/4 cup sugar
  • 1/4 cup packed brown sugar
  • 1 egg
  • 1/4 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup quick-cooking oats
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt 
  • 1/4 cup Grape-Nuts
Materials:
  • Measuring cups
  • Measuring spoons
  • Small mixing bowl
  • Teaspoon
  • Baking sheets
  • Cooling racks
Directions:
1.  In mixing bowl, cream the butter, peanut butter, and sugars.  Beat in egg and vanilla.  Combine the flour, oats, baking soda, and salt; gradually add to creamed mixture and mix well.  Stir in Grape-Nuts.
 
2.  Drop by rounded teaspoonfuls 3 in. apart onto ungreased baking sheets.  Flatten slightly with a fork dipped in flour.  Bake at 350° for 9-12 minutes or until lightly browned.  Cool for 5 minutes before removing from pans to wire racks. Makes about 2 dozen.

Chocolate Chip Peanut Butter Cookies
 
Ingredients:
  • 1 cup chunky or creamy peanut butter
  • 1/4 cup olive oil
  • 3/4 cup packed brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup miniature chocolate chips
Materials:
  • Measuring cups
  • Measuring spoons
  • Large mixing bowl
  • Small bowl
  • Teaspoon
  • Baking sheets
  • Cooling racks
  • Flat- bottomed glass
Directions:
1.  In large mixing bowl, combine peanut butter and oil.  Add sugars; mix well.   Add eggs and vanilla; mix well.   In small bowl, combine the flour, cocoa, baking soda and salt.  Add to peanut butter mixture; mix until blended (dough will be sticky).  Stir in chocolate chips.
 
2.  Drop by rounded teaspoonfuls 2 inches apart on ungreased baking sheets.  Flatten slightly with a glass.  Bake at 350° for 8-10 minutes or until set and tops are cracked.  Cool for 2 minutes before removing to wire racks.  Makes about 4 dozen.
